Every year I make this dish called "Nishime" for New Year's.
This year, I used some fresh shiitake mixed with a variety of Melissa's dried mushrooms and they turned out great! Just thought I'd send this to you since you're all vegetarian... It's really filling and good for you too.
Melissa's Fresh Produce Ingredients:
Melissa's shiitake and medley mushrooms (soaked in boiling water, then used water mixed with stock for more umami flavor)
Fresh bamboo shoot
Konnyaku (mountain yam/kelp gelatin)
Gobo (burdock root)
Konbu (sea kelp) wrapped with Kampyo (dried gourd)
Aburage (fried soybean tofu pocket)
Fried Japanese fish cake (optional)
Chopped up chicken (optional)
Araimo (japanese potato, optional)
Stock (vegetable or chicken...I used 1 box of Organic Chicken Stock)
